The Chablis winegrowing region is innovating once again, with the aim of adding value to vinification by-products with an anerobic digester that could begin producing biomethane by 2021.

On 5 February 2019, Chablis producers voted strongly in favor of acquiring a biodigester to transform pips and skins after vinification and the lees from the wine, in a move towards modernization.

This project first came about around 10 years ago, presented by the Fédération de Défense de l’Appellation Chablis (FDAC), and offered as an alternative to distillation. It is highly innovative within the French wine industry.
With an estimated cost of some €4.6 million, the biodigester will bring many benefits. It will allow this winegrowing region to take a major step towards ecoresponsibility by transforming waste into biomethane which could serve local residents. Located to the south of Chablis, it will also reduce the transport required to take the waste to treatment centers. The unit will also create jobs, and will bring added value from the pips with the extraction of oil and other elements used in the cosmetics industry.
