The project for the Cité des Vins et des Climats de Bourgogne involves three sites, one in Beaune, another in Mâcon, and a third in Chablis.

The General Assembly of the non-profit responsible for managing the Cité des Vins et des Climats de Bourgogne was held on 13 June 2019, to adopt its founding statutes, in the presence of the presidents of the Bourgogne Wine Board (BIVB), the Confédération des Appellations et des Vignerons de Bourgogne (CAVB), and the Fédération des Négociants-Eleveurs de Grande Bourgogne (FNEB).

This act marked the creation of the operating structure for the Cité des Vins et des Climats de Bourgogne network in Beaune, Chablis, and Mâcon.

Following the creation of this non-profit organization, François Labet and Louis-Fabrice Latour, respectively President and Vice-President of the BIVB, announced the appointment of Olivier Le Roy to the post of Director of the Cité des Vins et des Climats de Bourgogne. He started working in September with the team from the BIVB responsible for the project and with whom he will oversee the construction of the three Cités.
